Seriously. Even if you're not particularly fond of meat loaf, you will luv this!

1 can (8 oz) tomato sauce
1/4 cup brown sugar
1/4 cup vinegar
1 tsp. prepared mustard.

1 egg, beaten
1 medium onion, minced
1/4 cup soda cracker crumbs
2 lbs. lean ground beef
1 and 1/2 tsp. salt
1/4 tsp. pepper

In a small bowl, combine the tomato sauce, brown sugar, vinegar and mustard. Set aside.

Beat egg in large bowl. Add onion, cracker crumbs, ground beef, salt and pepper. Add 1/2 cup of the tomato mixture and blend thoroughly. Shape mixture into a loaf and place in a deep skillet/frypan with a lid. Cook over low heat (250 degrees on electric frypan) for one hour. Check occasionally to make sure loaf is not sticking to pan. When done, lift from frypan and place on serving platter. Heat remaining tomato sauce and drizzle some on top of meatloaf. Serve remaining sauce.
