Very tasty...makes a great lunch!
8 white bread slices, toasted, lightly buttered both sides
1 lb. lean ground beef
1/4 cup chopped onion
2 tbsp. chopped celery
1 tbsp. prepared mustard
1/2 tsp. salt
1 cup shredded cheddar cheese
1 egg, fork beaten
3/4 cup milk
1/2 tsp. salt
1/8 tsp. pepper
1/8 tsp. dry mustard
paprika
Arrange 4 toast slices in bottom of very lightly greased 9" square pan. Set aside.
Put beef, onion, celery, mustard, and first amount of salt into frypan. Scramble fry until brown and onion is tender. Spread half of this mixture over toast in pan. Sprinkle half the cheese over top.
Arrange remaining toast slices over cheese. Spread with remaining meat mixtur, followed by remaining cheese.
Mix egg, milk, salt, pepper and dry mustard together. Pour over top.
Sprinkle lightly with paprika. Bake, uncovered, at 350 degrees for 30-35 minutes. Serves four.
