View Full Version : Mincemeat Bran Muffins...

Mincemeat turns the bran muffin into something special...and mixing the batter the night before means u can have hot, fresh muffins for breakfast!

2 eggs
1 cup sugar
3/4 cup salad oil
2 cups milk
1 and 1/4 cups bran
2 cups flour
2 tsp. baking powder
2 tsp. soda
1 tsp. salt
1 and 1/4 cups mincemeat
rind of one lemon (optional)

Beat together the eggs, sugar and oil. Add milk and bran, beat well.

Combine dry ingredients and add to mixture. Add mincemeat and grated lemon rind (if using), stir until moistened.

At this point, cover bowl and let sit in fridge overnight.

In the morning, fill muffin cups with batter. Bake at 375 degrees for about 20 minutes. Makes @ 18 medium-sized muffins.
