Such a delicious candy, don't know why we tend to only make it at Christmas!

1 cup sugar
1/4 cup water
1 tbsp. light corn syrup
1 cup butter
2 cups slivered almonds
1 cup chocolate chips
1/2 tsp. rum extract
1/2 tsp. vanilla
ground almonds for dusting

Melt butter with sugar, syrup and water in a large non-stick frypan on medium heat. Stir constantly with a wood spoon. When butter is melted, add the slivered almonds.

When mixture comes to a rolling boil, set timer for 13-14 minutes and keep stirring. The mixture will thicken and turn amber in colour, the almonds will roast.

When the timer goes, add the extracts and turn into a large buttered cookie sheet with sides. Spread evenly. Distribute chocolate chips over top and spread evenly. Dust with ground almonds. When cool, break into pieces.
