ingredients


6 people:


250 g mascarpone
100 g brown sugar
20 speculoos biscuits
4 eggs
1 tablespoon of vanilla sugar
5 cl Amaretto or Marsala
20 cl tight black coffee (espresso)
bitter cocoa

Break the eggs and separate the whites from the yolks
Blanch the yolks by gradually adding brown sugar and vanilla sugar
Mix well, adding sugar to obtain a homogeneous mixture and fluffy. The eggs and sugar should form a ribbon firm.
