Ingredients

6 or 12 cooked prawns (depending on the size of the glasses)
2-3 leaves of gelatin (5 g)
1.5 cucumber
1 natural yoghurt
1 small bunch fresh cilantro (or mint)
2 egg whites
salt and pepper

Put the gelatine diluted in a large bowl of cold water.

Peel 1 cucumber, cut in half lengthwise and remove seeds with a spoon and cut into cubes. Put it in the bowl of a blender with yogurt and cilantro or mint, salt, pepper and mix thoroughly until obtaining a fine grout.

Heat 5 tbsp. tablespoons water in a small saucepan, remove from heat and dilute to the gelatin and pour the gelatin in blender jar and blend again to incorporate cucumber coulis.

Beat the egg whites from egg whites with a pinch of salt and stir them gently cucumber coulis.

Pour the mousse into small glasses and place in the refrigerator for 2 hours.

Wash the remaining ½ cucumber, wipe and slice it with a mandolin into very thin strips. Spread the slices on small foams, add peeled shrimp and a cilantro leaf on each glass and serve chilled.
